The good news is that baking rewards precision rather than intuition. If you can follow instructions and own a scale, you can bake well from your first attempt.
The one thing that changes everything: weigh your flour
This is the most important paragraph on this page. A cup of flour is not a fixed amount. Depending on whether the flour is scooped, spooned, packed, or settled, a "cup" ranges from about 120 to 155 grams — a swing of nearly 30 percent. On a recipe with three cups of flour, that's a whole extra half-cup of difference between two people following the same instructions.
That single variable is responsible for most dry cakes, tough cookies, and dense bread among beginners. It has nothing to do with skill. Buy a digital scale for about fifteen dollars, weigh in grams, and an entire category of failure disappears permanently.

That oven thermometer deserves a note. Most home ovens are miscalibrated, and a recipe that says 350°F while your oven delivers 325°F produces pale, flat, underdone results no technique will fix. Check it once and you'll know whether to adjust every recipe from then on.
What the ingredients actually do

The rules that actually matter
Don't overmix. For cakes, muffins, and quick breads, mix only until the flour disappears. Every extra stir develops gluten and makes the crumb tougher. Lumps in muffin batter are correct and are supposed to be there.
Room-temperature ingredients matter. When a recipe says room-temperature butter and eggs, it's because cold butter won't cream properly and cold eggs cause the batter to curdle and lose the air you just beat into it. Take them out an hour ahead.
Preheat fully. Ovens signal ready before they actually are. Give it an extra ten minutes past the beep — the oven walls need to be hot, not just the air.
Measure leavening precisely. Baking soda and powder work in small quantities where a little extra is genuinely detectable as a metallic, soapy taste.
Don't open the oven early. Especially for cakes and souffles. The temperature drop can collapse a rise that hasn't set yet.
How to tell when it's done
Recipe times are written for someone else's oven and are the least reliable instruction in any recipe. Use these instead:

Substitutions: be careful here
This is where baking differs most from cooking. In a stew, swapping an ingredient is usually fine. In a cake, ingredients are structural, and substituting changes the chemistry rather than just the flavor.
Reasonably safe: swapping milk for buttermilk if you add acid, one flavoring for another, or a nut for a different nut. Doubling a bake is not simply doubling everything. A batter twice as deep bakes far more slowly in the center and can burn at the edges before the middle sets. Honest expectations
Something will come out flat, dense, or overbrowned, and it will usually have a specific, findable cause — unweighed flour, a lying oven, overmixed batter. That's actually the encouraging part: baking failures have reasons, and reasons can be fixed. It isn't a mysterious knack that some people have.
Weigh your ingredients, check your oven temperature, and don't overmix. Those three habits alone put you ahead of most home bakers, and none of them requires any skill at all.
